Coriander is among the oldest herbs and spices, with its use dating back to ancient times. The dried seeds of the coriander plant are used as a spice, turning yellowish-brown or tan when ripe. These seeds offer a warm, subtle flavor with a hint of citrus and a soothingly warm, nutty, slightly fruity, and complex aromatic scent. They are a nutritional powerhouse, rich in potassium, vitamins A, C, and K, iron, magnesium, folic acid, and calcium.

 

Coriander seeds are extensively used as condiments in the preparation of curry powders, sausages, and seasonings, either roasted or unroasted. They are crucial in creating food flavorings, bakery products, meat products, sodas, syrups, puddings, candies, preserves, and liquors. Beyond their culinary uses, coriander seeds have medicinal applications in Ayurveda as a carminative, refrigerant, diuretic, and aphrodisiac, and are used in household remedies for seasonal fevers, stomach disorders, and nausea. Coriander oil and oleoresins are primarily used in seasoning sausages and meat products.
