Mustard Seed

Botanical Name: Brassica juncea (L.) Czern. & Coss.

Family: Brassicaceae

Mustard seeds are considered a crucial spice in culinary traditions. The flavor of mustard seeds is activated when they are cracked and mixed with a liquid. Mustard oil, derived from these seeds, is commonly used for body massages to retain warmth. The seeds are rich in oil and protein.

Widely used in Mediterranean and German cuisine, mustard seeds and their derivatives, including powdered form, pastes, sauces, and oils, enhance dishes with their distinct aroma and pungent flavor, primarily from the essential oil sinalbin. Brown mustard seeds are favored for tempering dishes and pickling, while mustard seeds are primarily used to make pastes, oils, and sauces.

Mustard is also a valuable source of magnesium and selenium, which help alleviate symptoms of asthma, menopause, and migraines.
